Also Known As: KASHA Product Info: Kasha (Kahsha) is hulled and roasted Buckwheat Groats. It can be eaten right out of the bag and is commonly used as a topping for frozen yogurt. Buckwheat (Fagopyrum Esculentum) is not technically a grain but an annual related to Rhubarb. Buckwheat is rich in amino acids and considered the "Heartiest" grain, although it is not as easy to digest as other grains. Kasha has an earthy, nutty, roasted flavor and crunchy texture. It is native to Central Asia and was introduced to Europe at the end of the middle ages. Buckwheat Groats have been an important food source, in a variety of forms, since the 10th Century BC. Suggested Use: Use in pilafs, casseroles, on top of salads and soups, or as a filling for Knishes and Piroshki. Top yogurt with Kasha as a snack. Kasha is traditionally mixed with a raw egg then toasted for 3 minutes; this helps seal the Groat. Ingredients: Roasted Buckwheat groats. Basic Preparations: Cook 1 cup of toasted Kasha in 2 cups of water or stock for 15 minutes. Remove from heat and let stand for 10 minutes. One cup dry yields 2 cups cooked. Or, use dry to top salads, soups, and cereals.
