They've recently received a great deal more attention here in the United States. Dried Mushrooms are very economical. A smaller amount of dried is needed in recipes since the flavor is much more concentrated than fresh varieties. They can be stored for long periods of time without spoiling. Special blend is a mild, yet savory combination of Shiitake, Chanterelle, Morel, Porcini, Oyster and Bolete. Suggested Use: Use this blend in stuffings, pilafs, rice dishes, pastas and cream sauces. The flavor compliments veal, white fish, poultry and pork dishes. Ingredients: Dried Mushrooms. Basic Preparations: Wild mushrooms may have stones imbedded in their flesh. It is strongly recommended to reconstitute the mushrooms prior to use. To reconstitute, place desired amount into a bowl covered with hot tap water and let soak for 20-30 minutes, stirring often to dislodge stones. General rule, 1 oz. dry reconstitutes to 3-4 oz.
